Sex On The Beach Cupcakes

For those of you who read Surprisingly Sweet, you are probably thinking “I’ve already seen this before!” Well you would be correct! I am taking my recipes and some select posts and reposting them here. I will eventually delete Surprisingly Sweet, so I figured bringing over my favorite posts would be a good idea!

This recipe is one I made for one of my best friend’s bachelorette party. They were a huge hit! So here is the run down: Sex on the Beach Cupcake with Peach Schnapps Frosting!

Sex on the Beach Cupcakes (makes 12 cupcakes)

INGREDIENTS
1 stick of unsalted butter, at room temperature
3/4 cup granulate sugar
2 large eggs, separated, at room temperature
1 1/2 cups all purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/4 cup cranberry juice (no sugar added)
1/4 cup orange juice (freshly squeezed)
Zest of 2 oranges
1/8 teaspoon cream of tartar
2 tablespoons Vodka
Peach Schnapps
 
DIRECTIONS
1) Preheat oven to 350 degrees F. Insert liners into a medium cupcake pan.
2) In a large bowl cream together butter and sugar until fluffy, about 3-5 minutes.
3) Add the egg yolks and beat well.
4) In a separate bowl shift together the flour, baking powder, baking soda, and salt.
5) Mix the orange juice, cranberry juice, and Vodka.
6) Add the dry ingredients to the creamed mixture, alternating with the juice mixture. Fold in the orange zest.
7) With clean and dry beaters, whip the egg whites until foamy. Then add the cream of tartar and beat the egg whites until stiff peaks form. Gently fold the whites with a rubber spatula into the batter.
8) Fill the cupcake liners one-half to two-thirds full. Bake for 15-20 minutes or until toothpick inserted in the center comes out clean.
9) Using a straw, poke some holes in the top of the cupcake.
10) Using a spoon, pour a little Peach Schnapps over the top of the cupcake so it gets into the holes.

Peach Schnapps Frosting

INGREDIENTS
3 cups confectioners’ sugar (powdered sugar)
1 stick unsalted butter, at room temperature
3-5 tablespoons Peach Schnapps
2 tablespoons whole milk
 
DIRECTIONS
1) Gradually add the sugar to the softened butter and cream together with an electric mixer.
2) Stir in the milk and start with 3 tablespoons of Peach Schnapps. Beat until smooth and of spreading consistency. Add a little more Peach Schnapps as needed for taste and consistency.

I piped the frosting onto my cupcakes but spreading with a knife would work as well. And with the Peach Schnapps soaked into the cupcakes, there was definitely a not-so-kid friendly kick!
